Silver Oak (Alexander Valley) 1991

At age ~17, this 100% Cabernet Sauvignon was perhaps a tad faded but after some time in the decanter nevertheless opened up to offer a pleasant bouquet and fine, characteristic flavors on the palate. The bouquet is dominated by mature Cab markers--cedar, leather, tobacco--under which are notes of truffle and something vaguely herbaceous. On the palate, everything is in excellent balance. The tannins are soft and silky, there’s still good fruit (plums and currants), but there’s also markers of maturity like mushrooms, soy sauce, and espresso. Grade: A--
