Very crisp. Green apple, citrus, almonds, buttered toast. A lovely match for a salad of baby greens, sundried tomatoes, basil. fennel, and smoked salmon. Grade: B+

If you enjoyed the Blanc de Noirs I encourage you to try the Brut Rose. It is made from 95% Pinot noir and has hints of berries and cream with very fine bubbles.
We currently grow the grapes for that particular sparkler so I’m a bit biased, but it is my favorite California sparkling wine by a wide margin.
